Roasted Cherry Tomatoes

Ingredients

cherry tomatoes

olive oil
kosher salt
pepper, plus more for serving

cottage cheese
Directions
- On small rimmed baking sheet, toss cherry tomatoes with olive oil and 1/4 tsp. each kosher salt and pepper; roast at 425°F until some start to burst, 8 to 10 min.
- In mini food processor, puree cottage cheese until smooth. Spoon cottage cheese onto plate and top with tomatoes and any juices in pan. Top with cracked pepper if desired.
