Directions
- In food processor, pulse slivered almonds to chop. Add dried apricots, shredded coconut, chia seeds, honey, vanilla extract, ground cardamom, and kosher salt, then process to finely chop.
- Shape mixture into 1-in. balls (about 1 heaping tbsp. each). If desired, roll in shredded coconut. Refrigerate in airtight container up to 1 week.
